Grilled Mahi-Mahi with Ancho Chili Jam

Directions

  1. Grill mahi mahi until done then reserve. 
  2. In a pot over medium heat, add oil.  Add garlic, onions, salt, pepper, cilantro and chili peppers and cook for 1-2 minutes. Add orange juice and sugar and simmer for 30 minutes. 
  3. Put mixture into food processor and puree.
  4. Strain and serve on top of fish.

  • 3 garlic, clove(s)
  • 8 8 oz mahi mahi, fillet(s)
  • 1 Tbsp. oil
  • 4 Cup(s) orange juice
  • 2 Tbsp. Peak Fresh Produce® Cilantro
  • 1 Peak Fresh Produce® Onion(s), sliced
  • 1 tsp. salt
  • 1/2 Cup(s) sugar
