Grilled Mahi-Mahi with Ancho Chili Jam
Directions
- Grill mahi mahi until done then reserve.
- In a pot over medium heat, add oil. Add garlic, onions, salt, pepper, cilantro and chili peppers and cook for 1-2 minutes. Add orange juice and sugar and simmer for 30 minutes.
- Put mixture into food processor and puree.
- Strain and serve on top of fish.

- 3 garlic, clove(s)
- 8 8 oz mahi mahi, fillet(s)
- 1 Tbsp. oil
- 4 Cup(s) orange juice
- 2 Tbsp. Peak Fresh Produce® Cilantro
- 1 Peak Fresh Produce® Onion(s), sliced
- 1 tsp. salt
- 1/2 Cup(s) sugar
