Grilled Squash Bahn Mi

Directions

  1. Spread each side of the French roll with Hellmann’s® Vegan Mayo.
  2. To the bottom slice, add slices of grilled squash, cucumber, pickled vegetables, jalapeños, and herbs.
  3. Place top of French roll on sandwich and serve.

Ingredients

  • 6 ea. roll(s), French
  • 9 oz. Hellmann's® Heavy Duty Vegan Mayonnaise
  • 12 slices cucumber, peeled and sliced lengthwise
  • 30 slices jalapeño(s)
  • 3/4 oz. basil, leaves, Thai, fresh, leaves only
  • 3/4 oz. mint, leaves
  • 3/4 oz. cilantro, fresh, leaves

Pickled Vegetables

Directions

  1. Dissolve sugar or honey in vinegar.
  2. Combine carrot and daikon.
  3. Cover with vinegar mixture and marinate 12 - 24 hours. Drain and reserve.

Ingredients

  • 4 oz. daikon radish
  • 4 oz. Carrots
  • 2 cups rice vinegar
  • 1/4 cup sugar, or honey

Grilled Squash

Directions

  1. Combine soy sauce, fish sauce, and Knorr® Professional Liquid Concentrated Vegetable Base. Mix well.
  2. Marinate sliced squash in sauce for a minimum of 2 hours.
  3. Grill squash until tender and keep hot.

  • 6 slices butternut squash , peeled and sliced 1/4 in. thick lengthwise
  • 1 cup soy sauce
  • 1/4 cup fish sauce, vegan
  • 1/2 cup Knorr® Professional Ultimate Vegetable Liquid Concentrated Base
