Guiltless Chicken and Waffles

Directions

  1. Thoroughly combine waffle batter, wild rice, and cranberries.
  2. Pour 3/4 cup of waffle batter onto a preheated, greased waffle iron. Cook until waffle is browned and crisp.
  3. Bring water to a boil. Pour Low Sodium Poultry Gravy Mix into boiling water and whisk vigorously. Hold warm.
  4. For each serving, slice chicken and place on waffle. Finish with 1/4 cup of gravy.

  • 2 1/2 lb. Multigrain waffle batter, prepared
  • 1 lb. rice, wild, cooked
  • 6 oz. cranberries, dried
  • 16 fl. oz. water
  • 2 3/4 oz. Trio Low Sodium Poultry Gravy Mix
  • 2 1/2 lbs. chicken breast, grilled
