Pork Loin with Chipotle Cane Sauce

Directions

  1. Coat the top of the pork loin with all of the above herbs and spices.
  2. Pre heat oven to 375 degrees.
  3. Place pork in roasting pan and cover , cook for 30-40 minutes.
  4. Allow pork to rest for 20 minutes before slicing. After cooled, slice pork loin and top with chipotle cane syrup and serve.

Ingredients

  • 1/4 cup paprika 
  • 1/4 cup thyme, dry
  • 5 lbs pork, loin(s)
  • 1/4 cup Roma® Basil, Dry
  • 2 tbsp Roma® Black Pepper, Ground
  • 1/4 cup Roma® Cumin, Ground
  • 1/4 cup Roma® Oregano, dry
  • 2 tbsp salt, kosher

Chipotle Cane Sauce

Directions

  1. In a sauce pan over medium high heat add oil, poblano peppers, onion, salt, pepper and red chili flakes. Cook for 2-3 minutes.
  2. Add garlic and cook for 1-2 minutes.
  3. Add pineapple juice and chipotle puree then reduce by half.
  4. Add simple syrup and cook for 2-3 minutes.
  5. Puree and serve over salad.

  • 1 1/2 tbsp red pepper, flakes
  • 1 tsp salt
  • 2 cups simple syrup
