Pork Shanks Tagine Style

Directions

  1. Heat pork shanks according to instructions.
  2. In separate braising pan add olive oil, garlic, and ginger, cook until aromatic. 
  3. Add ginger and all other spices and allow to toast slightly. Add tomato, honey, juices from pork osso bucco and bring to a boil, simmer for 5 minutes.
  4. Add the pork shanks, apricots and olives and cook for 15 minutes to flavor the pork.

Ingredients

  • 1 each cinnamon, stick
  • 1 tsp Roma® Red Pepper, Crushed
  • 2 tsp Roma® Cumin, Ground
  • 1 cup Roma diced tomato , in juice
  • 1 1/2 tsp Roma Garlic, chopped
  • 1 tsp ginger, pureed
  • 2 tbsp West Creek® Honey
  • 3/4 cup olive(s), Kalamata, pitted
  • 2 tbsp Piancone® Oil, Olive, Extra Virgin
  • 2 tsp paprika, smoked
  • 4 each Farmland Pork Shank Osso Bucco, reserve juice
  • 12 each Turkish apricot, dried, small diced
  • 2 tsp turmeric
