Pozole Rojo Con Pollo
Directions
- Sauté diced chicken thighs until lightly browned; remove from pan.
- Sauté onion and bell pepper in same pan until translucent. Add browned chicken thighs back into pan and mix with onion and pepper. Add hominy and stir together.
- Add Custom Culinary® True Foundations® Latin-Style Citrus Chili Sauce. Bring to a boil while stirring. Reduce to a simmer and cook for 30 to 40 minutes.
- Serve in a shallow bowl and garnish with cabbage, radish, cilantro and scallions.

- 2 ea pepper(s), red bell, medium dice
- 1 #10 can Hominy, white
- 8 ea Custom Culinary® True Foundations® Latin-Style Citrus Chili Sauce, 2# bags
- cabbage, as needed, shredded for garnish
- radish(es), as needed, sliced for garnish
- cilantro, fresh, as needed, chopped for garnish
- Scallions, as needed, chopped for garnish
