Add carrot, celery, onion and garlic in a food processor and pulse until coarsely ground. In a pan, heat butter, then add vegetable mixture and cover with lid on high heat to sweat. Stir every 5 minutes for 15 minutes total.
Add Roma® Sausage Style Crumbles and stir until browned. Add the red wine, tomatoes and cream, and bring to a gentle simmer. Let simmer for 1 ½ hours, then season with salt and pepper. Remove from heat, fold in whole basil leaves with stems and add nutmeg.
Cook pasta in salted water until al dente and drain.
To Serve: Toss sauce with pasta and finish with parmesan cheese, extra virgin olive oil and parsley.
