Southwest Chili Mac

Directions

  1. Cook ground beef, bell pepper and onion in large skillet on medium-high heat 4 minutes or until meat is no longer pink. Add seasonings; mix well. Stir in tomato sauce, tomatoes and water. Bring to boil.
  2. Reduce heat to low; simmer 15 minutes. Stir in corn; simmer 1 minute. Add macaroni; mix well.
  3. Cover and cook on medium heat 10 minutes or until pasta is tender, stirring occasionally.
  4. Stir in 1 cup of the cheese. Sprinkle with remaining 1/2 cup cheese. Cover. Let stand 5 minutes or until cheese is melted.

  • 1 lb beef, ground
  • 1 1/2 cup cheese shredded, cheddar, divided
  • 1 cup corn, frozen kernels
  • 4 tsp McCormick Culinary® Chili Powder
  • 1 tsp McCormick Culinary® Cumin, Ground
  • 1 1/2 tsp McCormick Culinary® Garlic Powder 
  • 2 tsp McCormick Culinary® Oregano Leaves, Mexican Style
  • 1/2 cup Peak Fresh Produce® Onion(s), chopped
  • 1/2 cup Peak Fresh Produce® Pepper(s), Green Bell, chopped
  • 15 oz tomato, sauce
  • 14 1/ oz tomato(es), canned diced, undrained
  • 1 cup water
