Preheat seasoned flattop, convection oven and fryer to 350F.
To make the red cabbage slaw, shave the red cabbage into a fine shred using a mandolin. Place in a stainless-steel bowl and combine with chopped green onions, cilantro, salt, red wine vinegar and honey. Mix until fully combined and set on the line or in the cooler for later use.
Place bacon on a line sheet pan and bake for 12-15 minutes until par baked and set aside.
Split buns in half and roll on butter roller and place on flattop for about 1-2 minutes until the bun is toasted and has the appearance of French toast.
Season the gourmade patty with salt and pepper and place on the flattop and cook for about 3-5 minutes per side. On the first flip place 2 sliced of pepper jack cheese in a star pattern on the top of the patty. It should be melted by the time the bottom side finishes cooking.
Heat bacon up alongside the patties and cook on each side for approximately a minute.
To assemble the burger; place marmalade on the bottom bun and top with red cabbage slaw, Gourmade patty topped with pepperjack, 3-4 jalapeno slices, 2 slices of bacon and marmalade on the top bun and serve with a side of hot honey cinnamon sweet potato fries.
