Roasted Caprese Burger

Directions

  1. Toss tomatoes and garlic in half of the oil until evenly coated. Bake at 325 degrees F for 15 minutes.
  2. Add tomatoes, half of the basil, garlic, thyme, oregano, remaining oil, salt & pepper to blender. Blend until smooth.
  3. Season the burger patty with salt & pepper and cook to desired doneness. Top with mozzarella for the last 30 seconds of cooking. While burger is cooking, also cook the bacon.
  4. Sauté red onion until soft and then add balsamic glaze and cook for 15 seconds more.
  5. Toast the burger bun.
  6. For assembly, place burger patty on bottom bun and top with bacon, basil, and balsamic caramelized onion. Then, spread the roasted tomato puree on the top bun to finish.

  • 2 ea. Ridgecrest® Bacon, Applewood Slice(s), double smoked
  • 2 slices ea. Roma® mozzarella log
  • 1/4 ea. Peak Fresh Produce® Onion(s), Red, jumbo, julienned
  • 1 tsp Piancone® Balsamic Glaze
