Add 1 tbsp of olive oil and sauté chicken for 3-4 minutes, add peppers, onions and fajita seasoning and sauté further for 4-5 minutes or until peppers and onions have softened and chicken is fully cooked. Set mixture aside.
Place Roma Wedges into the fryer at 350 degrees Fahrenheit (180 degrees Celsius) and fry for 3 1/2 minutes.
Line Roma Wedges in a single layer and top with shredded cheese, and chicken and pepper mixture.
Broil on low for 6-8 minutes or until cheese is fully melted. Lift Roma Wedges onto serving plate and top with pico de gallo, sour cream and chopped cilantro.
