Spicy Chicken Fajita Wedges
Directions
- Preheat a medium saucepan over medium heat.
- Add 1 tbsp of olive oil and sauté chicken for 3-4 minutes, add peppers, onions and fajita seasoning and sauté further for 4-5 minutes or until peppers and onions have softened and chicken is fully cooked. Set mixture aside.
- Place Roma Wedges into the fryer at 350 degrees Fahrenheit (180 degrees Celsius) and fry for 3 1/2 minutes.
- Line Roma Wedges in a single layer and top with shredded cheese, and chicken and pepper mixture.
- Broil on low for 6-8 minutes or until cheese is fully melted. Lift Roma Wedges onto serving plate and top with pico de gallo, sour cream and chopped cilantro.

- 1 lb. 8 oz. Roma® Coated and Seasoned Wedges
- 1 chicken breast, thinly sliced
- 1 Red Bell Pepper, seeded and thinly sliced
- 1 tbsp. Fajita seasoning
- 1/2 red onion, thinly sliced
- 1/2 cup cheese, Monterey Jack, grated
- 1/4 cup pico de gallo, (or salsa)
- 1/4 cup sour cream
- 1 tbsp. cilantro, fresh, chopped
- salt and pepper, to taste
