Sweet Potato Hash

Directions

  1. Bring water to boil then add potatoes and cook until a toothpick or knife inserts easily.
  2. Remove from water and cool off in colander under cold running water.
  3. Heat olive oil and bacon in large sauté pan over medium heat. Crisp bacon pieces then remove from pan and reserve.
  4. Add onion and potato to pan and cook over medium heat for 6-7 minutes.
  5. Stir in crispy bacon, peppers, green onion, salt, pepper, thyme, and basil and cook for 2-3 minutes then serve.

  • 1 tsp Peak Fresh Produce Parsley, chopped
  • 1 tbsp Roma® Oil, Olive
