West Texas Breakfast Tacos

Directions

  1. Heat pan over medium-heat.
  2. Add bacon fat, chorizo, onions, peppers and then sweat.
  3. Add Southwest seasoning, eggs and lightly scramble eggs.
  4. Warm tortillas on flat top grill.
  5. Evenly divide egg mixture between tortillas, drizzle with Jalapeño Ranch Dressing, sprinkle with cheese, scallions, and serve.

Ingredients

  • 1 tsp bacon fat
  • 1 tbsp chorizo, small dice
  • 1 tsp onion, small dice
  • 1 tsp Red Peppers , small dice
  • 1 tsp pepper(s), green, small dice
  • 1/8 tsp Southwest seasoning
  • 3 ea. egg(s), beaten
  • 3 ea. Corn Tortillas, 4 in. round
  • 2 tbsp Ken's® Jalapeño Ranch Dressing
  • 2 tbsp Jack cheese
  • 1 tbsp Scallions, chopped
