Using a large pot, heat oil over medium heat. Add onions and sausage. Cook for 5 minutes. Add garlic and cook for 3 minutes. Remove from pot and reserve.
Add Roasted Red Pepper & Gouda Soup to pot and simmer for 10 minutes.
Add cheese, oregano, parsley, roasted red bell peppers, salt and pepper.
Add sausage mixture back to pot and simmer 5 minutes.
To Serve: Using a #8 spoodle, portion 1/2 cup cooked pasta onto plate. Top with #4 spoodle (1 cups) sausage mixture. Serve immediately.
